Cassis and Champagne and Cookies

Last Thursday night was the cookie exchange….Yummy!  Now  I have a nice variety of special cookies for those people that I want to remember this Christmas Season.

I served goat cheese in phylo cups topped with Oregon raspberry preserves. 

 

As a special beverage I served Kir Royale made with Cassis Liquor and Korbel Champagne.  What a delicious treat!  The Cassis was a purchase I made when we visited the Clear Creek Distillery two months ago and I have been waiting to share this with my friends.  We all loved it and there is no guilt because we were consuming a lot of antioxidants!!

After I opened the champagne and kept it chilled in the water and ice filled ice bucket, I did what experience  Flight Attendant’s do to keep the champagne “bubbly”.   I put a spoon up-side-down into the open bottle of champagne.  Don’t ask me how it works, but it does.  The Champagne does not go flat.  You can even cover it (spoon and all) with foil and refrigerate and it will still be bubbly the next day…that is if there is any left!

Here is a picture of the Korbel with the spoon to keep it bubbly!
